    A son of Korean immigrant parents who owned a restaurant in Virginia, opened his own Asian fusion restaurant in  New York in 2004, which played a massive role in changing the American dining culture.

    The successful legend of David Chang and his food empire, Lucky Peach began. David Chang’s passion for Asian food combined with his hard-trainings of classic European cuisine led to a creation of unexpected new flavors which stole the hearts of New Yorkers, and the hype spread out to Canada and Australia.

    Currently, over the 10 years of Momofuku’s success resulted in total of 9 different restaurants in different categories: Noodle Bar, Ssäm Bar, Ko, Má Pêche, Seiōbo, Momofuku Toronto: Noodle Bar Toronto, Daishō, and Shōtō, Fuku, a sister bakery with multiple locations throughout New York City, the two bars: Booker and Dax, Nikai, and a Culinary Lab.

    Throughout these 10 years, Momofuku was critically acclaimed and David Chang become one of the most celebrated chef in the country with numerous world renowned awards of prestige culinary figures such as James Beard Foundation Awards, The S. Pellegrino World’s Best Restaurants, Bon Appétit 20 Most Important Restaurants in America, Michelin and any others.

    David Chang and his Momofuku Empire’s success seems to be deeply rooted in the distinctive quality of his flavors, often commented as “Strange, yet Familiar”. David Chang’s approach to Asian fusion was appraised for expanded the boundaries of widely accepted tastes, and flavors by constant efforts towards the innovative Asian cuisine along by his Chef staffs with high character upon his demands. His dishes are referred by critics as “appetite for adventure” and “fun, unexpected, food avoids easy categories always evolving”. Although exterior of his restaurant is rather casual, the unpredicted and unexpected surprise of this food empire became the new kind of American comfort cuisine as reinvented the casual restaurant with Asian taste.

    Momofuku started with the simple menus like pork buns and ramen, but David Chang’s understanding of how to arrange ingredients for surprisingly delicious yet, somewhat new and exciting interpretation of familiar dishes evolved into continuous new creations of wildly unusual ingredients in fascinating combinations - Whipped tofu with sea urchins and tapioca, Fuji apple kimchi with jowl bacon, and English muffin soaked with whipped pork fat.

    The reason for Momofuku’s reputation from beginning with its breathless hype and spontaneous dining despite of bar with plywood wall, small in size, was obtained repackaged flavors from endless to experiments, and agony the culinary art – the taste of new creation. One of the comments from Momofuku’s diner left the core remark of this dining experience, ““It was like going to a bar, but he was serving the best food in town”.

    It is quite apparent that all 9 different restaurants of Momofuku delivers all around unexpected pleasurable tasting experience to the public. But what is more interesting and distinctive to David Chang and his food empire is his role as a culinary pioneer and his spirit and passion towards restless challage and the successful legand of David Chang and Momofuku Empire has already built the castle of inspiration to many young entrepreneurs and chefs. Also David Chung’s kitchen transcends the cultural boundaries of Asian fusion cuisin beyond the categories, inviting all diners from different tastes and cultures to truly blend in and therefore, evolve into the new noun, David Chang’s Momofuku Empire, itself.
